Bedoukian’s High-Impact Flavor Ingredients Were Enjoyed at Flavourtalk 2025

Flavourtalk 2025 took place in London on March 26 and 27, and Bedoukian Research was an enthusiastic participant.  The popularity of the event has grown over the years so a second day was added to Flavourtalk in 2025.  Bedoukian presented its unique, high-quality flavor ingredients on the second day and this allowed the Bedoukian team to experience other presentations on the 26th.

Nathalie Leandri, Global Sales Director, Eleanor Badhe, Sales Manager EMEA, and Maha Ali, Application Lab Manager comprised the team for Bedoukian.  Nathalie Leandri commented, “It was an amazing event that gave us the opportunity to connect, in person, with our customers and get live feedback on the ingredients we presented.”

Bedoukian presented three ingredients in four formulations at Flavourtalk.  This included METHYL-2,4-NONANEDIONE (BRI #841), which was recently added to the Bedoukian pallet and was being introduced to the EU market at Flavourtalk.  Bedoukian demonstrated the following at the show:

  • 3-METHYL-2,4-NONANEDIONE (BRI #841),is a very versatile flavor ingredient.  It provides a sweet, hay character, reminiscent of green and black tea. At lower levels, its cream notes enhance caramel, milk and other dairy flavors. Its dry green notes work well for use in dried parsley, chive, and dried spinach. It also works well for seafood flavors such as anchovy and seaweed.  The ingredient occurs naturally in green and black teas, anchovies, soybean oil, butter, and dried parsley and spinach.

This newly added ingredient was presented at Flavourtalk in black tea and in a seaweed-flavored drink.  In the black tea formulation, 3-METHYL-2,4-NONANEDIONE brought the tea leaves character forward by increasing the sweet hay note.   In the seaweed formulation, the ingredient turned the fishy character to a natural seaweed.

  • 6-METHYLHEPTANAL (BRI #282),delivers a fresh, juicy, citrus character reminiscent of grapefruit juice.  6-METHYLHEPTANAL adds fresh grapefruit character to a variety of applications especially beverages. The ingredient blends very well with nootkatone and occurs naturally in orange juice essence oil.  It adds fresh-squeezed juice notes in any citrus flavor including orange, tangerine, grapefruit, pomelo, and yuzu.

At Flavourtalk, 6-METHYLHEPTANAL was presented in a grapefruit beverage.  Adding 6-METHYLHEPTANAL to the formulation increased the flavor strength and created a more natural grapefruit taste similar to pink grapefruit.

  • SPILANTHOL (BRI #255), was first introduced by Bedoukian at last year’s Flavourtalk. Spilanthol is a nature identical molecule that occurs in Jambu oil and offers trigeminal tingling with a numbing effect at higher levels. It is great for oral care products and novelty confections and beverages because of the “zing” it adds. 

This year at Flavourtalk, Bedoukian demonstrated SPILANTHOL in a dark chocolate mint candy where the ingredient enhanced the peppermint/menthol cooling effect in the confection.
